The Secret Ingredient

A friend of mine requested a post on my homemade pizza. She says I must have some kind of secret ingredient I use because hers doesn't turn out like mine when she makes it.

Well... she's right.

There is a secret ingredient I had not told her about previously... but I am ready to reveal what makes my pizza so amazing.

I start off with this simple recipe:

1 Tbsp yeast

1 cup warm water
1 Tbsp sugar

2 Tbsp oil
1 tsp salt

about 3 cups flour

Mix all ingredients together in one mixing bowl (I use my Kitchenaid). Let the dough rise for a half hour then roll out onto desired pan. Add toppings and cook at 425 degrees for 10 minutes.
While the dough is rising I get my toppings ready. Use whatever your family likes. Our pizzas include pepperoni, olives, mushrooms, pineapple, green pepper and plenty of cheese.
Plus the secret ingredient.

The above recipe times 3 is enough for me to make 3 regular sized and one jumbo sized pizza. I split the dough into 4 blobs and flatten each dough-blob on a pizza pan using my favorite kitchen tool... my hands.
Lay down some sauce, sprinkle a little Parmesan cheese over the top and then add a layer of mozzarella.
Cover the mozzarella with whatever toppings you've decided on...
Add another layer of mozzarella...
And bake.

Oh, I almost forgot. Did you notice the secret ingredient in the picture of all the toppings? Here it is:

That's right, I like to pretend I am acting out a scene from a musical as I prepare my pizzas.
When one of the kids come into the kitchen I improvise and add them into the scene. (I'm awesome with kitchen improv.)
Mr. Scarlata would be so proud to know that all of those classes in high school were not in vain.
I believe it gives the pizza some pizazz. Makes it a little more cultured. More diverse. More tasty.

Be sure to orchestrate a big finish for the best results...Now you try. Throw a little of my secret ingredient in the next time you make pizza and see if it doesn't make a difference.

All-a-Boy Inspires Me

He did it. All-a-Boy's getting karate lessons. I'm wondering if the same thing would work for me...


Dear Family,

I would like an iPod for the following reasons.

First, when I have to go places by myself, like the grocery store, I can listen to the iPod and I won't have to listen to the noise around me (like giggly girls and really interesting conversations that I am tempted to listen in on). Plus it would be like having Josh Groban or Bono or whoever singing to me while I shop and that would be awesome. Also, when I need a vacation I can just go in the pantry with my iPod and eat Girl Scout cookies by myself and not have to hear everyone asking, "Where's mom?"

Second, music makes me more happy and motivated. When I am feeling sad because we are out of chocolate cake or ice cream or cheese, I can listen to a cheerful song and it will make me happy. Also, exercise is very important and I will be more motivated to exercise if I have an iPod to listen to while I do it. So iPods are good.

To top it all off, I deserve it. For instance, I do lots of things like make food and change diapers. I also wash, dry, fold and put away the laundry. I could do these things while spontaneously singing and dancing if I had an iPod.

In conclusion, an iPod would block out noise, make me happy, and I deserve it.

Please consider these reasons and respond as soon as possible. Please tell me the reasons why.

What's For Dinner?

It had been a long time since I made Sweet and Sour Chicken for dinner.

I love this meal. Even though it takes a little more effort than usual, it is well worth it.

I gathered the ingredients and began to slice, measure, chop and mix.

Boy, did it smell tasty when it was finally ready to serve!

I dished up a serving for everyone, proud of myself for putting forth the extra effort.

I was a true domestic goddess!

As the kids gathered around the table, Princess looked upset.

"What's wrong, Princess?" I asked. "Why are you sad?"

No response.

Me: "You should be SO happy today because look! Did you see what I made for dinner? Do you know what it is?"

Princess: "Yeah. It is dus-gusting!"

Now I remember why it has been so long since I've made it.

I am the Domestic Goddess of Disgusting.

You Can Call Us The Apple Dumpling Gang

Ever since I was a smallish child I have wondered about Apple Dumplings. Why was that Disney movie called "The Apple Dumpling Gang", and why did the kids like them so much? Were they like fritters? Were they like Chicken and Dumplings - only with apples?

I'm not saying I thought about this every day between then and now. But I read a post while blog surfing where someone wrote about making apple dumplings. And I thought to myself, "I have more apples than I know what to do with. I am DONE with applesauce! I am going to make apple dumplings!"

Now, here are a few a big 'secrets' that it took me years to learn:
1. ANYONE can be an amazing cook if they are willing to make the time to do things from scratch and follow directions.
2. Pretty much anything you could ever want to make is found in the Betty Crocker Cookbook with the red and white cover. Even those things you're embarrassed to admit you don't know how to make. This book has saved my life on many occasions. Boiled eggs? Check. Mashed potatoes? Check. Toast? Figured that one out on my own, thank you very much.
3. Be flexible with recipes. If it says to keep the apples whole and you want to chop them up, do what you want!
Sprinkle cinnamon on the apples before sealing the dumplings up! Add some nutmeg to the syrup! Get crazy!
Put 2 pans in the oven at the same time if you want. I know, air circulation and all that. But I'm flexible! And it worked. Besides, what's better than one pan of dumplings? Two. I like to peek while things are cooking. Look at how puffy they are getting! And that syrup is getting all thick and bubbly and um, ...sweetupy. (You can also invent words to describe things you are cooking. It makes it more splendiful.)
Then presto! Apple Dumpling Goodness for everyone! (side note: Am I a good mom or a bad mom since we ate these instead of lunch?)
